These wonderful chocolate-raspberry bars are a family tradition. My mom has been making them for as long as I can remember. Chocolate Raspberry Christmas Bars are super easy to make, require very few ingredients, and the results are fantastic! Just about every time I give these away or take them somewhere, I am asked for the recipe.
1 1/4 cups all-purpose flour
1/2 cup sugar
1/2 cup butter or margarine, softened
1 cup seedless raspberry jam
1 1/2 to 2 cups semi-sweet chocolate baking chips
2/3 cup all-purpose flour
6 Tbsp. sugar
4 Tbsp. butter or margarine, softened
1/2 tsp vanilla extract
1/2 cup chopped pecans
Pre-heat oven to 350 degrees. In large bowl, combine 1 1/4 cups flour and 1/2 cup sugar. With pastry blender or 2 knives, cut in 1/2 cup butter until mixture resembles fine crumbs. Press into a greased 9×13 inch pan. Bake 15 to 20 minutes until lightly browned. Remove from oven. Spread jam over the surface of the base. Sprinkle the chocolate chips over the jam. In a bowl, mix the 2/3 cup flour and the 6 Tbsp. sugar. Cut in the 4 Tbsp. butter and 1/2 tsp vanilla, until you once again have a crumb mixture. Stir in the chopped pecans. Sprinkle the topping mixture over the chocolate chips. Pat down lightly. Return to oven and bake 10 to 15 minutes longer, or until the top looks “dry”. Cool. Cut into bars. Makes one 9×13 pan’s worth of bars. These are rich, so they can be cut small. But you might not want to cut them small after you try them. I have also included them on gift plates, by cutting them and putting them into muffin papers so they do not make such a mess. They look very pretty presented this way.
